Ingredients
1 cups Red cabbage, shredded
1 cup Green cabbage, shredded
1 cup Carrots, shredded
½ cup Bell peppers, diced
¼ cup Red onion, thinly sliced
½ cup Sunflower seeds
¼ cup Dried cranberries
¼ cup Almonds, slivered
¼ cup Olive oil
2 tbsp Apple cider vinegar
1 tbsp Honey
1 tbsp Dijon Mustard
Salt and pepper to taste
Instructions
1.Combine the red cabbage, green cabbage, carrots, bell peppers, and red onion in a large bowl.
2.Add in the sunflower seeds, dried cranberries, and slivered almonds.
3.To make the dressing, whisk together the olive oil, apple cider vinegar, Dijon mustard, and honey in a small bowl.
4.Pour the dressing over the salad mixture and toss to combine.
5.Season with salt and pepper to taste, mixing well to ensure even coating.
6.Let the salad sit for about 5 minutes to allow the flavors to meld.
7.Serve fresh, and enjoy.
