Ingredients
2 pounds baby Yukon Gold or red potatoes
2 tablespoons butter, melted
3 cloves garlic, minced
¼ cup Parmesan cheese, grated
1 ½ tablespoons olive oil
1 tsp Italian seasoning
¼ tsp salt
¼ tsp black pepper
Additional Parmesan cheese for serving
Fresh parsley, chopped, for garnish
Instructions
1.Lightly spray the inside of the slow cooker with cooking spray.
2.Place the potatoes in the slow cooker.
3.Whisk together the melted butter, olive oil, garlic, Parmesan, Italian seasoning, salt, and pepper in a small bowl.
4.Pour the mixture over the potatoes and toss to coat them evenly.
5.Cover and cook on high for 3 to 4 hours or on low for 5 to 6 hours until the potatoes are tender.
6.Sprinkle additional Parmesan cheese and fresh parsley on top before serving.
