1 pound Onions, chopped
1 pound Cabbage, chopped
2 pounds Red bell peppers, chopped
2 pounds Green bell pepper, chopped
2 cloves Garlic
4 cups Green tomatoes, peeled and chopped
3 cups Sugar
2 cups Apple cider vinegar
2 cups White distilled vinegar
2 tbsp Pickling salt
2 tbsp Prepared Mustard
1 tbsp Celery seeds
1 tbsp Mustard seeds
2 to 1 tbsp Red pepper flakes, to taste
1 ½ tsp Turmeric
1 ½ tsp Allspice
1 ½ tsp Ground Ginger
How to make chow chow Relish
Step1. Mix salt with cabbage, onion, bell peppers,, and tomatoes in a large mixing bowl. Let it rest in the refrigerator for at least 8 hours. Drain completely after refrigerating.
Step2. Toast the celery and mustard seeds in a large pan for 1 minute or until fragrant. Let them cook at room temperature.
Step3. Add turmeric, sugar, prepared mustard, allspice, ground ginger, red pepper flakes, apple cider vinegar, and white vinegar to the pan and let it simmer for 10 minutes.
Step4. Add drained vegetables and let it simmer for 15 minutes until the cabbage blooms and is still crunchy.
Step5. Pack in a Sterilised Glass jar and seal with paraffin wax.
Step6. Store for a month and enjoy.
