Description

Mexican tortilla casserole is a hearty and flavorful dish that combines the best Mexican cuisine in a convenient, one-dish meal.

½ pound Ground beef
½ cup Onion, diced
½ cup Green bell pepper, diced
½ tsp garlic powder
½ tsp cumin
½ tsp chili powder
½ cup salsa
4 Flour tortillas
1 cup Cheddar cheese, shredded
½ cup Black beans, drained and rinsed
½ cup Corn kernels
¼ cup Sour cream, for serving
¼ cup Cilantro, chopped, for garnish


Instructions

1.In a large skillet, cook ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
2.Add the diced onion, bell pepper, garlic powder, cumin, and chili powder to the beef and cook for 3-4 minutes until the vegetables are softened.
3.Stir in the salsa, black beans, and corn. Cook for an additional 2 minutes until everything is heated through.
4.Preheat the oven to 350°F and prepare a baking dish by lightly greasing it.
5.In the baking dish, layer one tortilla at the bottom. Spread a portion of the beef mixture over the tortilla, then sprinkle 6.some shredded cheese. Repeat the layers until you use all the tortillas, finishing with cheese on top.
7.Bake in the preheated oven for 15-20 minutes or until the cheese is melted and bubbly.
8.Serve hot, topped with a dollop of sour cream and a sprinkle of chopped cilantro.
