Ingredients : 
1 cup Mashed potatoes
Mozzarella cheese cubes per ball
¼ cup Cheddar cheese, shredded
Slices bacon per ball
¼ cup All-purpose flour
1 Egg
½ cup Bread crumbs
Oil for frying

How to make Mashed Potato Bacon Bombs : 

Step1. Take a scoop of mashed potatoes and flatten it in your hand. Place one cube of mozzarella and some cheddar cheese in the center and form the mashed potatoes around it, shaping into a ball.

Step2. Repeat this process for all the potato bombs.
Step3. Preheat the oven to 350°F and prepare a baking sheet with parchment paper.

Step4. Roll each potato ball in flour, then dip it into the beaten egg and coat with bread crumbs.

Step5. Wrap a slice of bacon around each ball, securing it with a toothpick if needed.
Step6. Heat oil to medium-high heat in a deep pan and fry the bacon-wrapped potato bombs until golden brown, about 2–3 minutes.

Step7. Transfer them to the prepared baking sheet and bake for an additional 10–12 minutes until bacon is crispy.
