1 pound Baby Potatoes, cut into 1-inch cubes
1 ½ pound Chicken Breast, boneless and skinless, cut into 1-inch cubes
1 cup Bacon Bits
1 cup Cheddar cheese
½ cup Mozzarella cheese
½ cup Monterey Jack cheese
⅓ cup Ranch dressing
½ cup Red onion, sliced
1 clove Garlic, minced
2 tsp Chicken Seasoning of your choice
Salt and Pepper to taste
Green Onion, for garnish


Instructions

1.Start by preheating the oven to 450 F.
1.Add potatoes with salt and pepper and ranch dressing in a mixing bowl.
2.Put the seasoned potatoes in a greased baking dish. Make sure to spread them to cook evenly. Save the bowl.
3.Bake them for 20 minutes, mixing halfway through to cook evenly or fork tender. Take the potatoes out once they are done.
4.Bring the temperature of the oven to 400 F.
5.In the saved bowl, add chicken with a little salt and pepper, red onions, garlic, and chicken seasoning.
6.Mix the chicken with the baked potatoes and cover with foil. Continue baking for 20 minutes, or until the chicken is cooked through.
7.Take the baking dish out and remove the foil.
8.Top the dish with cheese and bacon bits and bake for another 10 minutes or until the cheese is melty and forms a crust.
9.Garnish with green onions, and enjoy.
