Ingredients
1 cup frozen Hash browns, thawed
½ cup cheddar cheese, shredded
¼ cup Cooked sausage, crumbled
¼ cup Sour cream
¼ cup Green bell pepper, chopped
¼ cup Yellow onion, chopped
1 Clove Garlic, minced
1 large Egg
1 tbsp green onions, chopped
½ tsp Smoked paprika
½ tsp Italian herb seasoning
Salt and pepper to taste

Instructions
1.Preheat your oven to 400°F and prepare a mini muffin tin by spraying it with cooking spray.
2.Combine the hashbrowns, cheddar cheese, cooked sausage, green bell pepper, onion, garlic, egg, sour cream, green onions, smoked paprika, Italian herb seasoning, salt, and pepper in a mixing bowl.
3.Spoon the mixture into the prepared mini muffin tin, filling each cup evenly.
4.Bake for 18-20 minutes or until the bites are golden brown and crispy on top.
5.Let the bites cool for a few minutes before removing them from the tin.
6.Serve warm, garnished with extra green onions if desired.
