Ingredients ; 
1 ½ cup Rolled Oats
⅔ cup All-purpose Flour
⅔ cup Butter
⅔ cup Chocolate chips, semi-sweet
½ cup Brown sugar
¼ cup White sugar
½ cup Caramel bits of choice
2 Eggs
½ tsp Vanilla
½ tsp Baking Soda
A pinch of Salt

How to make Carmelita Cookies 

Step1. In a large mixing bowl, cream together butter, brown sugar, and white sugar. You can use a hand mixer or a stand mixer, too.

Step2. Add eggs and whisk until you get a pale mixture.

Step3. Add vanilla, salt, and baking soda and mix well.

Step4. Gradually add flour, oats, and mix to incorporate well to form a cookie dough

Step5. Now fold in the caramel bits and chocolate.

Step6. Refrigerate the cookie dough for 30 to 40 minutes.

Step7. Preheat the oven to 350 F and prepare a baking tray by lining it with parchment paper.

Step8. Scoop out the dough and place it over the baking tray, spacing the pieces 3 inches apart.
Step9. Bake them for 10 to 12 minutes or until golden.
Step10. Cool on a wire rack for 5 to 10 minutes and serve.
